My Favorite Minestrone

this is super easy (my kind of recipe) and makes a lot of yummy soup.  add french bread and shredded parmesan and you’ve got a great meal.

first start with a really big pot.

1 pound ground beef — brown and drain

1 cup chopped celery + 1/4 cup chopped green onion — add to meat and cook till soft

add 1/4 cup chopped green pepper

add 4-5 cans chicken broth — bring to boil

1 large bag frozen mixed vegetables — simmer 15 minutes

1 large can kidney beans or great northern — simmer 10 minutes

1 jar spaghetti sauce — simmer 30 minutes

add 1 teaspoon Italian seasoning

pinch of salt and pepper

add cooked pasta of choice when serving (if you leave it in the soup, it soaks up all the fluid)

this recipe makes a lot so you’ll have leftovers or extra for freezing.

enjoy!
